Viktor knows that Jayce considers his attractiveness to the general public and his attractiveness to Viktor to be two different things, and he's still learning how to navigate that discrepancy. Where Viktor thinks this should be obvious, Jayce needs personal reassurance from him, specifically. The touching is good--the outright worshipping of his body even better, though by now he's acutely aware of how far a little verbal affirmation goes.

Viktor doesn't really bring up his past relationships--mostly because he considered them diversions more than anything serious, partly because by now everything before his illness, before Hextech (before Jayce) feels like a life lived by someone else. Still, he wants to emphasize that despite his preoccupation with his work and general lack of interest in anything but, he still has desires. Preferences. Finds certain things attractive, in other men.
